The Need for Aseptic Processing

How does Aseptic Processing Work?

- Pre-treating the food product with heat to reducemicrobial load. This involves flash heating milk to 71–74°C or heating juices and soups to 85–95°C.

- Filling the pre-sterilized packages under aseptic conditions inside an ISO Class 5 cleanroom where air is filtered to remove 99.999% of particles 0.5 microns or larger in size.

- Sealing the filled packages using methods like double seaming, thereby hermetically sealing the product inside sterile packages.

- Applying a final heat treatment, usually 3–10 seconds of heating at 115–139°C, to achieve commercial sterility. This step prevents any post-process contamination.

- Rapid cooling of the filled aseptically packaged products before they are stored at room temperature for extended shelf life of 3–6 months without refrigeration.

Aseptic processing requires strict control and monitoring at each phase to ensure quality and safety of the finished products. The sterilized packaging materials and aseptic environments are maintained according to standards like ISO and FDA regulations. Process parameters like time, temperature, and pressure are closely monitored and documented. Microbiological testing of samples verifies that the process is effective in eliminating pathogenic microbes and extending shelf life. Proper packaging materials, hermetic seals and distribution under controlled conditions help maintain the quality until consumed.

The short duration of high heat treatment minimally impacts vitamins, flavors and other nutrients compared to conventional techniques. Hence aseptically processed foods are considered healthier.

A variety of liquid, gel and particulated foods like soups, sauces, fruit purees, baby foods, etc. can be aseptically packaged due to the enclosed aseptic environment. This creates more product options.

Aseptic terminals allow filling smaller individual or multipacks compared to large cans. This reduces packaging usage overall.

Low Distribution Costs

No refrigeration requirements during transport and storage decreases logistics and warehousing costs. Products also occupy 40% less shelf space.
